Description

This simple dish from Italian cuisine is a real treat! The potatoes are pre-cooked and then baked crispy in the oven. Crushing them gives them a great texture and wonderfully absorbs the flavors of olive oil, oregano, salt and pepper. Perfect as a side dish to meat or fish, but also as a vegetarian main course with a fresh salad. I like to make these potatoes when I need something quick but still special on the table. A real all-rounder for every occasion!

Ingredients (6 ingredients)

  • 500 g new potatoes
  • breadcrumbs
  • oregano
  • olive oil
  • pepper
  • fine salt

Preparation (5 steps)

Prepare new potatoes

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

Place 500 g new potatoes in the simmering basket. Add 700 ml water to the mixing bowl, insert the simmering basket and cook for 15 min./Varoma/speed 1.

Let potatoes cool

After cooking, carefully remove the new potatoes from the simmering basket and let cool for a few minutes.

Season potatoes

Place the cooled new potatoes in a baking dish greased with olive oil and drizzle with olive oil. Press down lightly with a glass or potato masher.

Refine potatoes

Sprinkle the potatoes with salt, pepper, oregano and breadcrumbs and drizzle with another splash of olive oil.

Bake potatoes

Bake the potatoes in a preheated oven at 200°C (top/bottom heat) or 190°C (fan oven) for 35-40 minutes until golden brown and crispy. Turn halfway through baking time.
