Description

These toast creations with apple curry are a real eye-catcher at any brunch buffet or as a quick snack in between. The combination of sweet apple, spicy curry and crunchy celery in the creamy mayonnaise is simply irresistible. I like to make these sandwiches when I need something quick and still want to offer something special. They are super easy to prepare and taste simply delicious! Ideal for parties or a cozy weekend breakfast. If you like, you can also add some roasted peppers.

Ingredients (11 ingredients)

  • 1 Staudensellerie Celery stalk
  • 1 Apfel Apple
  • 1 tbsp Lemon juice
  • 1 bunch Chives
  • 200 g Salad mayonnaise
  • Salt
  • Pepper
  • 1 tsp Curry
  • 1 bunch Arugula
  • 12 Scheiben Sandwich toast
  • 8 Scheiben Cooked ham

Preparation (5 steps)

Chop celery

Thermomix® Setting
3 sec/Speed 5

Cut 1 celery stalk into coarse pieces, put in the mixing bowl and chop for 3 sec./speed 5. Scrape down the side with the spatula.

Grate apple

Thermomix® Setting
5 sec/Speed 4

Peel, halve and core 1 apple and put in the mixing bowl. Chop for 5 sec./speed 4. Immediately add 1 tbsp lemon juice and mix. Scrape down the side with the spatula.

Chop chives

Thermomix® Setting
3 sec/Speed 5

Wash 1 bunch of chives, shake dry, put in the mixing bowl and chop for 3 sec./speed 5. Set aside some for garnish.

Prepare apple curry cream

Thermomix® Setting
10 sec/Speed 3

Put 200 g salad mayonnaise, chopped celery, apple and chives, 1 tsp curry, salt and pepper to taste in the mixing bowl and stir for 10 sec./speed 3. Season to taste and add more seasoning if necessary.

Top sandwiches

Wash and drain the arugula. Spread 1 tsp apple curry cream on each of 8 toast slices. Place a slice of cooked ham and some arugula on top. Place 2 topped toast slices on top of each other. Cover with one untopped toast slice each. Secure sandwiches with wooden skewers. Cut off bread crusts all around as desired. Quarter and arrange sandwiches. Garnish with remaining chives and arugula.
