Description

This eggplant cream with tahini, also known as Babaganoush, is a delicious and easy-to-prepare Middle Eastern appetizer. Perfect for summer, when eggplants are at their best, this cream is an explosion of flavors. Tahini, sesame seed paste, gives it a rich and creamy note, while lemon and garlic add freshness and vibrancy. I often prepare it for an aperitif with friends, accompanied by toasted bread or fresh vegetables. It is a healthy and tasty alternative to the usual sauces, and it is prepared in a short time with the help of our trusted Thermomix®!

Ingredients (10 ingredients)

  • 1 kg eggplants
  • 4 tbsp tahini sauce
  • 1 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 0.5 clove garlic
  • 0.5 tsp cumin
  • fine salt
  • parsley
  • sweet paprika
  • extra virgin olive oil

Preparation (7 steps)

Prepare eggplants

The eggplants are divided in half with a cutting board and a knife.

Bake eggplants in the oven

The halved eggplants are placed on a baking sheet lined with baking paper, with the cut side facing down. Bake in a static oven at 200°C for about 50 minutes.

Extract eggplant pulp

After cooking, let the eggplants cool for a few minutes. Then, extract the pulp with a spoon and transfer it to the Thermomix bowl.

Purée eggplant pulp

Add the eggplant pulp to the bowl and blend for 20 seconds at speed 7.

Add tahini, olive oil and lemon juice

Add 4 tablespoons of tahini sauce, 1 tablespoon of extra virgin olive oil and 2 tablespoons of lemon juice to the bowl.

Season and mix

Add ½ clove of garlic, ½ teaspoon of cumin and fine salt to taste in the bowl. Mix for 15 seconds at speed 4.

Serve babaganoush

Serve the babaganoush garnished with fresh chopped parsley, sweet paprika and a drizzle of extra virgin olive oil. Serve with toasted bread.
