Description

This eggplant cream, known as Babaganoush, is a delicious Middle Eastern appetizer that is easy to prepare with the Thermomix®. The eggplants are baked to enhance their smoky flavor, then the pulp is blended with garlic, tahini, fresh mint, and lemon juice to create a smooth and flavorful cream. Perfect served with warm pita bread or fresh vegetables. A great vegetarian and vegan option, ideal for a summer aperitif or an informal brunch. It is prepared in no time and the result is always a success!

Ingredients (8 ingredients)

  • 2 piece Eggplants
  • 2 clove Garlic
  • 1 bunch Mint leaves
  • 0.5 piece Lemon juice
  • 1 pinch Paprika
  • 2 tbsp Tahini
  • 2 pinch Salt
  • 2 tbsp Extra virgin olive oil

Preparation (5 steps)

Eggplant preparation

Preheat the oven to 200°C. Place the whole eggplants on a baking sheet and bake in a preheated static oven for about an hour, until they are very soft. This step is not performed with the Thermomix.

Removing the skin and squeezing

Remove the eggplants from the oven and let them cool slightly for a few minutes. Then remove the skin and transfer the pulp to a colander. Sprinkle the pulp with two pinches of salt and let it rest for half an hour, so that it loses the excess water. Squeeze lightly with your hands. This step is not performed with the Thermomix.

Chop the garlic

Put 2 cloves of garlic (without the core) in the bowl and chop for 3 Sec./Stufe 7.

Blend the ingredients

Add the squeezed eggplant pulp, 2 tablespoons of tahini, 1 bunch of mint leaves, the juice of 1/2 filtered lemon and 2 tablespoons of extra virgin olive oil to the bowl. Blend for 30 Sec./Stufe 8, gradually increasing to Stufe 10, until a thick and homogeneous cream is obtained.

Transfer and decorate

Transfer the babaganoush to a bowl and decorate it with a drizzle of oil, a sprinkling of paprika and a few fresh mint leaves. Serve immediately. This step is not performed with the Thermomix.
