Description

This lobster cream is an elegant and comforting dish, perfect for a special occasion. Lobster, with its delicate flavor and firm texture, combines with aromatic vegetables and a touch of white wine to create a rich and flavorful broth. The addition of cream and lobster liver gives it a unique creaminess and flavor. Although it requires a bit of time, the end result is worth it. Ideal to serve as an appetizer for a Christmas dinner or a special celebration. Go ahead and prepare it and surprise your guests with this delight from the sea!

Ingredients (12 ingredients)

  • 1 piece Carrot
  • 1 piece Leek
  • 1 piece Onion
  • 40 gramos Butter
  • 1 Tallo Celery
  • 50 mililitros White wine
  • 2 piece Shallots
  • 1 piece Lobster
  • 1 cucharada sopera Tomato paste
  • 1.3 litros Water
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation (12 steps)

Lobster preparation

Extract the meat from the lobster tail and chop it. Reserve the meat and the rest of the body (shell) for the broth. Separate the liver and roe, if it has them, and reserve.

Lobster broth preparation (part 1)

Add half of the butter (20 grams) and the pieces of the lobster shell to the glass. Program 5 Min./120°C/Stufe 1.

Add the vegetables

Add the carrot, leek, onion, celery and shallots to the glass, all chopped into small pieces. Program 3 Min./120°C/Stufe 1.

Evaporate the alcohol

1 min/Varoma/Speed 1 Varoma

Add the white wine to the glass and program 1 Min./Varoma/Stufe 1 without the measuring cup so that the alcohol evaporates.

Broth cooking

Add the water, tomato paste and salt to the glass. Program 30 Min./100°C/Stufe 2.

Strain the broth

Strain the lobster broth with a fine-mesh strainer and reserve.

Sauté the liver and roe

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the rest of the butter (20 grams), the lobster liver and the roe (if it has any) to the glass. Program 3 Min./120°C/Stufe 1.

Incorporate the cream

Thermomix® Setting

Add the cream to the glass and program 10 Seg./Stufe 4 to mix the ingredients. Remove from the glass and reserve.

Prepare the flour cream

In a bowl, mix the flour with a couple of tablespoons of cold water. Beat until you get a liquid cream. Add a little lobster broth to the flour mixture and stir until integrated.

Thicken the broth

Thermomix® Setting
5 min/194°F/Speed 2 90

Pour the rest of the lobster broth into the glass. Add the flour mixture and program 5 Min./90°C/Stufe 2. Stir with the spatula during cooking.

Add the liver cream and lobster

Thermomix® Setting
2 min/194°F/Gentle stir speed/Linkslauf 90 Reverse

Strain the mixture of roe, liver and cream over the glass. Add the lobster meat that we had reserved. Program 2 Min./90°C/Sanftrührstufe/Linkslauf to heat the soup.

Serve

Serve the hot lobster cream and garnish with finely chopped fresh chives.
