Description

This Creme brûlée recipe is a classic dessert that is easy to prepare with the Thermomix®. The creamy base of cream, egg yolks and vanilla is cooked in the oven and then topped with a crispy caramel layer. Ideal for festive occasions or as a sweet end to a menu. The preparation time is about 3 hours, including cooling time, and yields 4 servings.

Ingredients (5 ingredients)

  • 500 ml Cream
  • 4 piece Egg yolks
  • 50 g Sugar
  • 1 tsp Vanilla extract
  • 4 tsp Sugar (for caramelizing)

Mix cream, egg yolks and sugar

Add 500 ml cream, 4 egg yolks and 50 g sugar to the mixing bowl and stir for 7 min./80°C/speed 3.

Add vanilla extract

Add 1 teaspoon vanilla extract and stir in for 10 sec./speed 2.

Pour cream into molds

Pour the cream into four heat-resistant molds (approx. 125 ml capacity).

Cook cream in the oven

Place the molds in a baking dish and pour enough hot water into the dish so that the molds are about halfway in the water. Cook in a preheated oven at 150°C top/bottom heat for about 45-60 minutes. The cream should still tremble slightly.

Cool cream

Remove the cream from the oven and let it cool completely. Then refrigerate for at least 2 hours, preferably overnight.

Caramelize sugar

Before serving, sprinkle the surface of the cream with some sugar (about 1 teaspoon per mold) and caramelize with a crème brûlée burner until the sugar is golden brown.
