Description

This broad bean cream with pecorino cheese is a true celebration of spring flavors! The sweetness of fresh broad beans blends perfectly with the flavor of pecorino cheese and the freshness of mint. I often prepare it in the spring, when the broad beans are at their best, and serve it on toasted bread croutons or as a sauce for pasta. It is a delicious and quick idea for an appetizer or aperitif, but also an original way to enrich a simple pasta dish. Try it, it will win you over!

Ingredients (6 ingredients)

  • 300 g cleaned broad beans
  • 1 clove garlic
  • 100 g grated pecorino cheese
  • 100 ml olive oil
  • 1 q.b. fresh mint
  • 1 q.b. fine salt

Preparation (4 steps)

Preparing the broad beans

Open the broad bean pods and shell them. Remove the outer cuticle from each broad bean. Proceed in this way until you have 300 g of cleaned broad beans.

Chop the ingredients

20 sec/Speed 8

Put the cleaned broad beans, a clove of garlic, a few fresh mint leaves and 100 ml of olive oil in the bowl. Close the lid and chop for 20 Sec./Stufe 8.

Add the pecorino cheese and salt

Thermomix® Setting
15 sec/Speed 7

Add 100 g of grated pecorino cheese and a pinch of fine salt. Close the lid and blend again for 15 Sec./Stufe 7, until you get a creamy and homogeneous pesto. If necessary, scrape the mixture down and repeat the operation for a few seconds.

Serve

Transfer the broad bean cream to sterilized jars and serve as you prefer. Excellent on bread croutons or as a sauce for pasta.
