  • 1 Stück Shallot
  • 1 Zehe Garlic
  • 1 Stück red chili pepper
  • 900 ml Vegetable broth
  • 2 EL Oil
  • 2 Stück Sweet potatoes
  • 450 g Sweet potato
  • 100 g Chorizo in one piece
  • 2 EL Sherry
  • 2 Stiel Parsley
  • 100 g Crème fraîche
  • nach Geschmack Salt

Preparation (8 steps)

Chop shallot, garlic and chili

Peel 1 shallot and 1 clove of garlic and place in the mixing bowl. Chop for 3 sec./speed 5. Cut open 1 red chili pepper lengthwise, remove the seeds, add the flesh and chop for 3 sec./speed 5.

Sauté shallot, garlic and chili

Add 2 tbsp oil and sauté for 3 min./120°C/speed 1. If necessary, push down with the spatula.

Add sweet potato and sauté

Peel 2 sweet potatoes (approx. 450 g each), cut into cubes and place in the mixing bowl. Sauté for 3 min./120°C/speed 1.

Cook the soup

Add 900 ml vegetable broth (gluten-free if necessary) and simmer for 15 min./100°C/speed 1.

Prepare chorizo

Peel 100 g chorizo in one piece and cut into 2-3 mm thick slices. Fry crispy in a pan without fat. Deglaze with 2 tbsp sherry if desired.

Purée the soup

30 sec/Speed 10

Add half of 100 g crème fraîche and purée until very fine for 30 sec./speed 10.

Season the soup

10 sec/Speed 4

Season with salt and stir for another 10 sec./speed 4 if necessary.

To serve

Divide the soup into cups and garnish with 1 dollop of crème fraîche, chorizo chips, remaining chopped chili and chopped parsley. Wash and chop the leaves of 2 sprig(s) of parsley.
