Description

This creamy black salsify cream soup with hazelnut-cress topping is a vegetarian and gluten-free dish, prepared in the Thermomix®. The main ingredients are black salsify, potatoes, shallots and hazelnuts. In just 35 minutes, 4 servings of a hearty soup are created, ideal as an appetizer or light main course. Especially suitable for autumn and winter, also as a festive version for Christmas.

  • 2 Stück Shallots
  • 400 g Black salsify
  • 150 g Potatoes
  • 4 EL Sunflower oil
  • 100 ml Dry white wine
  • 800 ml Vegetable broth
  • 2 EL Hazelnuts
  • 1 Beet Cress
  • 200 ml Coconut milk
  • Salt
  • Pepper

Preparation (10 steps)

Prepare shallots

Peel and quarter 2 shallots. Place the prepared shallots in the mixing bowl.

Chop shallots

Chop the shallots for 3 sec./speed 5.

Sauté shallots

Add 4 tbsp sunflower oil to the chopped shallots in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare vegetables

Wash, peel, rinse again under water, and then slice or dice 400 g black salsify and 150 g potatoes. Place the prepared vegetables in the mixing bowl.

Sauté vegetables

Add the vegetables to the shallots in the mixing bowl and sauté for 4 min./120°C/speed 1.

Deglaze and simmer

Add 100 ml dry white wine and 800 ml vegetable broth (gluten-free if necessary) to the mixing bowl and simmer for 15 min./100°C/speed 1.

Roast and chop hazelnuts

Roast 2 tbsp hazelnuts in a pan without fat. Remove, let cool briefly and chop. Set aside.

Purée soup

30 sec/Speed 10

Purée the soup in the mixing bowl for 30 sec./speed 10. Use the spatula if necessary.

Refine soup

5 min/194°F/Speed 1 90

Add 200 ml coconut milk, salt and pepper to taste to the mixing bowl and heat for 5 min./90°C/speed 1.

Arrange

Fill the soup into bowls and sprinkle with chopped hazelnuts and cress. Cut cress from the bed and use for garnish.
