Description

This creamy pasta with potatoes and mussels is a dish that immediately takes me back to my childhood. I remember my grandmother often prepared it, especially in the summer when fresh mussels abounded. The combination of creamy potatoes with the flavor of the sea is simply delicious. The preparation is a bit long, but it's absolutely worth it. Perfect for a family dinner or with friends, this pasta is a real comfort food. A touch of chili pepper adds that pinch of zest that never hurts. Serve it hot and steaming, and you'll see how successful it is!

  • 250 g short pasta
  • 400 g potatoes
  • 800 g mussels
  • 100 ml tomato passata
  • 1 piece onions
  • 1 clove garlic
  • 1 piece chili pepper
  • 3 gambi parsley
  • olive oil
  • pepper
  • fine salt

Preparation of the aromatic sauté

Pour 50 ml of olive oil into the bowl. Add 1 whole clove of garlic, the stems of 3 parsley stalks and 1 chili pepper. Sauté for 3 Min./120°C/Stufe 1.

Cooking the mussels

Add 800 g of mussels to the bowl. Close the bowl and cook for 5 Min./100°C/Stufe 1. Check that the mussels have opened. If necessary, extend the cooking for a few minutes.

Shell the mussels and filter the liquid

Remove the mussels from the bowl and shell them, placing the molluscs in a bowl. Filter the cooking liquid with a sieve and set it aside.

Preparation of the potatoes

Peel 400 g of potatoes and cut them into small cubes.

Sauté the onion

Pour 50 ml of olive oil into the bowl. Add 1 chopped onion and sauté for 3 Min./120°C/Stufe 1.

Brown the potatoes

Add the diced potatoes to the bowl and brown for 5 Min./120°C/Stufe 1.

Add the filtered mussel broth to the bowl and cook for 15 Min./100°C/Stufe 1, or until the potatoes are soft.

Addition of the tomato passata

Add 100 ml of tomato passata to the bowl and continue cooking for 5 Min./100°C/Stufe 1.

Cooking the pasta

Add fine salt to taste, pepper to taste and 250 g of short pasta to the bowl. Cover with water until it slightly exceeds the pasta. Cook for the time indicated on the pasta package, 10 Min./100°C/Stufe 1, Linkslauf.

Addition of the mussels

Thermomix® Setting
1 min/122°F/Gentle stir speed 50 Reverse

Add the shelled mussels to the bowl and mix for 1 Min./50°C/Sanftrührstufe, Linkslauf, to distribute them evenly.

Plate and serve

Plate the potatoes and mussels pasta with the cooking sauce and decorate with chopped fresh parsley. Serve hot.
