Description

This creamy poultry dish is a springtime delight, perfect for a Sunday brunch or a light lunch. The chicken breasts, tender and juicy, are enhanced by a smooth sauce with fresh cream, flavored with fresh fennel and garnished with crunchy broccoli. The preparation is quick and easy thanks to the Thermomix®, which allows you to steam the poultry and make a velvety sauce in a jiffy. I love the freshness of the fennel that goes wonderfully with the sweetness of the cream and the delicate taste of broccoli. A balanced and tasty dish that will please the whole family!

Ingredients (7 ingredients)

  • 4 piece Chicken breast(s)
  • 300 g Broccoli(s)
  • 4 tiges Fennel
  • 20 cl Liquid fresh cream 30% fat
  • 2 c. à soupe Oil
  • Salt
  • Pepper

Preparation (5 steps)

Preparation of chicken foil packets

Salt and pepper the chicken breasts. Place each chicken breast on a sheet of aluminum. Sprinkle with a tablespoon of oil. Place a sprig of fennel on each chicken breast. Close the foil packets tightly.

Cooking the foil packets in the Varoma

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Pour 500 ml of water into the Thermomix bowl. Place the foil packets in the Varoma. Steam for 20 Min./Varoma/Stufe 1.

Cooking the broccoli

Thermomix® Setting
8 min/Varoma/Speed 1 Varoma

While the foil packets are cooking, place the broccoli florets in the steam basket. Pour boiling salted water into the steam basket until the broccoli is covered. Cook for 8 Min./Varoma/Stufe 1. Drain and keep warm.

Preparation of the cream sauce

Thermomix® Setting
3 min/176°F/Speed 2 80

Pour the liquid fresh cream into the Thermomix bowl. Salt and pepper. Add the chopped fennel fronds and one or two diced broccoli sprigs. Heat over low heat for 3 Min./80°C/Stufe 2.

Plating

Unwrap the chicken cutlets and arrange them on 4 plates. Generously coat with cream sauce. Serve the reheated broccoli in a knob of melted butter.
