Description

This celestine poultry dish is a classic of French cuisine, revisited for easy and quick preparation with the Thermomix®. I love preparing this recipe, especially in the autumn, when the mushrooms are at their peak. The poultry, tender and flavorful, is enhanced by the creamy sauce with mushrooms, tomatoes and a touch of cognac. It's a comforting dish, perfect for a Sunday lunch or a dinner with friends. The preparation is simple and the result is always a success. Feel free to accompany it with rice or potatoes for a complete and gourmet meal. A real delight!

  • 1 piece Chicken
  • 150 g Mushrooms
  • 3 piece Tomatoes
  • 60 g Butter
  • 1 verre(s) Cognac
  • 300 ml White wine
  • 200 ml Poultry stock
  • to taste Salt
  • to taste Pepper
  • Parsley
  • 2 gousse(s) Garlic

Preparation of ingredients

Cut the poultry into pieces on a cutting board. Clean and cut the mushrooms into pieces. Peel and seed the tomatoes. Reserve all ingredients.

Chop the garlic

Put the 2 cloves of garlic in the Thermomix bowl and chop for 3 seconds at speed 7.

Cooking the garlic

Add 60 g of butter to the bowl and cook for 3 minutes at 120°C at speed 1.

Adding mushrooms and tomatoes

Add the 150 g of chopped mushrooms and the 3 peeled and seeded tomatoes to the bowl. Cook for 5 minutes at 100°C at speed 1.

Cooking the poultry

In a non-stick frying pan, brown the pieces of poultry with the garlic-butter-mushroom-tomato mixture. Once golden brown, flambé with cognac. Then, put everything back in the Thermomix bowl.

Adding white wine and stock

30 min/212°F/Speed 1/Linkslauf 100 Reverse

Add 300 ml of white wine and 200 ml of poultry stock to the bowl. Salt and pepper to your liking. Cook for 30 minutes at 100°C at speed 1 in Reverse direction.

Adding parsley

Add the chopped parsley to the bowl and mix for 10 seconds at speed 2 in Reverse direction.
