  • 4 Stück Organic Oranges
  • 500 g Yogurt (3.5% fat)
  • 200 g Low-fat Quark
  • 80 g Sugar
  • 3 Zweig(e) Mint

Preparation (11 steps)

Prepare gelatin

Soak the gelatin in cold water according to the package instructions. Perform this step without Thermomix.

Grate orange zest

Wash, dry, and zest one orange with a fine grater. Set the zest aside. Perform this step without Thermomix.

Prepare orange juice

Juice two oranges. You will need about 150 ml of orange juice. Pour the juice into a pot.

Prepare yogurt cream

Thermomix® Setting
20 sec/keine/Speed 4

Add 500 g yogurt, 200 g low-fat quark and 80 g sugar to the mixing bowl and mix for 20 sec/speed 4 until creamy.

Dissolve gelatin

Heat the orange juice in a pot (do not boil!). Add the squeezed gelatin and dissolve while stirring. Remove the pot from the stove.

Temper gelatin

Add 3 tablespoons of the yogurt cream to the gelatin in the pot and stir. Perform this step without Thermomix.

Stir in gelatin

Thermomix® Setting
10 sec/keine/Speed 3

Add the gelatin mixture to the remaining yogurt cream in the mixing bowl and stir for 10 sec/speed 3.

Fold in orange zest

Thermomix® Setting
5 sec/keine/Speed 2 Reverse

Add the grated orange zest to the mixing bowl and fold in for 5 sec/reverse/speed 2.

Fill and chill mousse

Pour the orange mousse into four dessert glasses and refrigerate for at least 4 hours. Perform this step without Thermomix.

Prepare orange segments

Peel and fillet the remaining oranges. Perform this step without Thermomix.

Garnish

Wash and shake dry the mint. Garnish the cream with orange segments and mint leaves. Perform this step without Thermomix.
