Description

This creamy zucchini pasta with artichokes is an absolute highlight for warm days! The combination of tender zucchini strips, aromatic artichoke hearts and a hint of lemon makes this dish a taste experience. I love how quick and easy this pasta is to prepare - perfect for a quick lunch or an uncomplicated dinner. With the Thermomix® the preparation is done in no time. A dash of cream and pesto provide the creaminess and the special touch. If you like, you can sprinkle some grated cheese on top. Simply delicious!

Ingredients (13 ingredients)

  • 320 g Zucchini
  • 1 clove Garlic
  • 425 ml Artichoke hearts (can)
  • 2 tbsp Olive oil
  • 200 g Tortiglioni
  • 1.25 l Vegetable broth
  • 200 g Whipping cream
  • to taste Salt
  • to taste Pepper
  • 1 piece Organic lemon
  • 0.5 bunch Parsley
  • 2 tbsp green Pesto
  • 30 g Cheddar

Preparation (9 steps)

Prepare zucchini

Wash zucchini and cut into slices. Set aside.

Chop garlic

Peel the clove of garlic, put it in the mixing bowl and chop for 3 sec./speed 7. Scrape down from the edge with the spatula.

Prepare artichokes

Place artichoke hearts in a sieve and drain. Then quarter and set aside.

Sauté zucchini and garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Put olive oil in the mixing bowl, add zucchini slices and garlic and sauté for 3 min./120°C/speed 1.

Cook pasta

Thermomix® Setting
15 min/212°F/Speed 1/Linkslauf 100 Reverse

Add tortiglioni, vegetable broth and whipping cream to the mixing bowl, season with salt and pepper and cook for 15 min./100°C/speed 1/reverse without measuring cup. Stir in between with the spatula.

Grate lemon zest

Wash the lemon and grate some of the peel. Halve the lemon and squeeze out the juice.

Chop parsley

Wash the parsley, shake dry and chop coarsely, except for a few sprigs.

Refine pasta

Thermomix® Setting
1 min/122°F/Gentle stir speed/Linkslauf 50 Reverse

Add artichokes, chopped parsley, lemon zest and pesto to the mixing bowl and stir in for 1 min./50°C/gentle stir setting/reverse.

Season and serve

Season the pasta with lemon juice, salt and pepper. Coarsely grate the cheddar and sprinkle over it. Garnish with remaining parsley and possibly lemon slices and serve.
