Description

This creamy sweet potato soup with chili shrimp skewers, prepared in the Thermomix®, combines sweet potatoes, onions, garlic and chili to create a warming dish. The orange juice provides a fruity note. In 45 minutes, a hearty soup for 4 servings is created. Ideal as an appetizer or light main course, especially in the colder season.

Ingredients (13 ingredients)

  • 1 Stück Onion
  • 2 Stück Sweet potatoes
  • 2 Zehe Garlic
  • 1 Stück Chili pepper
  • 4 EL Rapeseed oil
  • 800 ml Vegetable broth
  • 200 ml Orange juice
  • 1 Stück Lemon
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 30 g Parsley
  • 200 g Shrimp
  • 4 EL Crème fraîche

Preparation (12 steps)

Prepare onion, sweet potatoes and garlic

Peel and quarter 1 onion. Peel and roughly dice 2 sweet potatoes. Peel 2 cloves of garlic. Wash 1 chili pepper, halve lengthwise, remove the core and finely dice the pulp. Set aside half of the chili pepper.

Chop onion

Put the quartered onion in the mixing bowl and chop for 3 sec./level 5.

Sauté onion

Add 4 tbsp rapeseed oil to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Add sweet potatoes, garlic and chili

Add the diced sweet potatoes, 1 clove of garlic and half of the diced chili pepper to the mixing bowl and chop for 3 sec./level 4.

Add vegetable broth and orange juice

Add 800 ml vegetable broth and 200 ml orange juice to the mixing bowl and simmer for 15 min./100°C/level 1.

Puree soup

Thermomix® Setting
30 sec/Speed 10

Puree the soup in the mixing bowl for 30 sec./level 10.

Season soup

Squeeze the juice of one lemon. Stir the soup with salt, pepper and 1 tbsp lemon juice in the mixing bowl for 10 sec./level 3 and season to taste.

Chop parsley

Thermomix® Setting

Wash 30 g parsley, pat dry and place in the mixing bowl. Chop for 3 sec./level 8 and transfer.

Cut garlic into slices

Peel 1 clove of garlic and cut into thin slices.

Thread shrimp on skewers

Thread 4-5 shrimp (200 g) onto a skewer each.

Fry shrimp

Heat 2 tbsp rapeseed oil in a pan and fry the shrimp in it for about 2 minutes on each side. At the end, add garlic and remaining chili and fry briefly. Season with salt, pepper and 1 tbsp lemon juice.

Serve soup

Divide the soup into soup bowls, add 1 tbsp crème fraîche and 1 shrimp skewer each as topping. Sprinkle with parsley.
