Description

This cheese leek ground beef soup is a real feel-good classic! I especially like to make it when it's cold outside. The recipe is super easy and quick to prepare, perfect for a stressful day. The ground beef provides a savory note, the leek for a fine spice and the cheese makes the soup incredibly creamy. A dash of nutmeg rounds off the whole thing perfectly. If you like, you can sprinkle some fresh parsley over it. Simply delicious!

Ingredients (10 ingredients)

  • 800 g Leek - uncleaned
  • 2 clove Garlic
  • 500 g Ground beef
  • 1 tbsp Rapeseed oil
  • 1 l Vegetable stock
  • 200 g Cream cheese - double cream
  • 50 g Grated cheese - e.g. Cheddar or mountain cheese
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg

Preparation (7 steps)

Prepare leek

Cut the leek into rings and set aside.

Chop garlic

Put the garlic cloves into the mixing bowl and chop for 3 sec./speed 7.

Fry ground beef

Heat the rapeseed oil in a pan and sauté the ground beef in it until it is crisp. Add the chopped garlic and the leek and sauté for approx. 5 minutes.

Add ground beef-leek mixture to the mixing bowl

Add the fried ground beef-leek mixture to the mixing bowl.

Add vegetable broth and simmer

Add the vegetable broth to the ground beef-leek mixture in the mixing bowl and simmer for 5 min./100°C/speed 1.

Add cheese and melt

Thermomix® Setting
3 min/140°F/Speed 2 60

Add the cream cheese and the grated cheese and stir in for 3 min./60°C/speed 2 until the cheese has melted.

Season the soup with salt, pepper and nutmeg and stir for 10 sec./speed 3.
