Description

These oat and spinach crepes are a delicious and nutritious option for breakfast or snack. I have been looking for a healthy alternative to traditional crepes for some time, and this recipe has become a must in my kitchen. The spinach gives it a touch of color and an extra of vitamins, and the flavor is surprisingly good! They are perfect to accompany with fresh fruit, a little honey or even with savory fillings. In addition, they are prepared in the blink of an eye with the Thermomix®. Go ahead and try them, you'll love them!

Ingredients (8 ingredients)

  • 1 cup Spinach
  • 130 gramos Oat flour
  • 2 unidades Eggs
  • 1 packet Calorie-free sweetener
  • 1 chorro Vanilla essence
  • 150 mililitros Milk
  • 1 pinch Salt
  • 1 chorro Canola oil

Preparation (5 steps)

Prepare the ingredients

Have all the ingredients ready: spinach, oat flour, eggs, sweetener, vanilla essence, milk, salt and canola oil.

Crush spinach, egg and vanilla

Add the spinach, eggs and vanilla essence to the bowl. Crush for 1 minute at speed 5.

Add the rest of the ingredients

Add the oat flour, sweetener, milk and a pinch of salt to the bowl. Mix for 30 seconds at speed 4 until a homogeneous mixture is obtained.

Cook the crepes

Heat a non-stick frying pan with a little canola oil. Pour a portion of the mixture into the hot frying pan and spread it quickly. Cook over low heat for 3 minutes on each side.

Serve

Serve the spinach crepes and enjoy. They can be accompanied with fruit, honey or peanut butter.
