Description

These banana pancakes with fruity raspberry sauce are an absolute hit with young and old! I especially like to make them on the weekend for brunch. The bananas make the pancakes nice and juicy, and the raspberry sauce provides a pleasant acidity. The reduced sugar content also makes them a great option for a healthy breakfast or a light dessert. The preparation is super easy and thanks to the Thermomix® it's done in a flash. A recipe that always goes down well with me!

Ingredients (10 ingredients)

  • 300 g Frozen raspberries
  • 5 piece Bananas (ripe)
  • 300 ml Milk
  • 5 piece Eggs
  • 400 g Wheat flour Type 405
  • 1 Pck. Baking powder
  • 3 tbsp Oil
  • 0.5 piece Vanilla bean
  • 1 tbsp Honey
  • 4 tbsp Pistachio kernels

Preparation (8 steps)

Prepare raspberries

Place the frozen raspberries in a bowl and let them thaw. This can be done in the refrigerator or at room temperature.

Prepare banana puree

Thermomix® Setting
10 sec/Speed 5

Put the peeled bananas in the mixing bowl and process into a puree for 10 sec/speed 5. If necessary, use the spatula to push down and repeat the process.

Make pancake batter

Thermomix® Setting
20 sec/Speed 4

Add milk, eggs, flour, baking powder, oil and honey to the banana puree in the mixing bowl and mix for 20 sec/speed 4 to a smooth batter.

Bake pancakes

Heat some oil in a coated pan. Add a small portion of batter to the pan and bake until golden brown on both sides. Keep the finished pancakes warm.

Extract vanilla pulp

Slit the vanilla bean with a knife and scrape out the pulp.

Prepare raspberry sauce

Thermomix® Setting
20 sec/Speed 8

Place the thawed raspberries, honey and vanilla pulp in the mixing bowl and puree for 20 sec/speed 8. If necessary, use the spatula to push down and repeat the process.

Chop pistachios

Thermomix® Setting
3 sec/Speed 5

Put the pistachio kernels in the mixing bowl and chop for 3 sec/speed 5.

Serve pancakes

Serve the pancakes with the raspberry sauce and sprinkle with the chopped pistachios.
