Description

These crêpes stuffed with sun vegetables are a simple and tasty delight, perfect for a sunny lunch or a light dinner. I often prepare them with colorful peppers and caramelized onions, all enhanced with herbes de Provence. The crêpe batter, prepared in advance, makes the recipe even faster. It's a friendly and economical dish, ideal for using seasonal vegetables. Feel free to add a touch of fresh goat cheese for even more indulgence!   • 2 null onions
  • 4 null peppers

  • 250 grammes flour

Preparation of the crêpe batter

Thermomix® Setting
20 sec/Speed 4

In the bowl of the Thermomix®, pour 1/2 liter of milk, 250 grams of flour and 3 eggs. Mix for 20 Sek./Stufe 4. Let the batter rest for at least 30 minutes.

Preparation of the vegetables

Peel and finely chop 2 onions. Wash, seed and cut into thin strips 4 peppers of different colors.

Cooking the onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Pour 2 tbsp of olive oil into the bowl of the Thermomix®. Add the chopped onions and cook for 3 Min./120°C/Stufe 1.

Adding the peppers and simmering

Thermomix® Setting
15 min/212°F/Linkslauf Speed 1 100 Reverse

Add the peppers cut into strips, salt, pepper and herbes de Provence. Cover and simmer for 15 Min./100°C/Linkslauf Stufe 1, stirring gently with the spatula from time to time.

Cooking the crêpes

Meanwhile, cook the crêpes in a pan with a little butter. Keep the crêpes warm.

Garnish and fold the crêpes

After cooking the vegetables, garnish each crêpe with the pepper preparation and fold them in half or in four.
