Description

This crispy chicken with spices is a real treat! I often prepare it for Sunday lunches or evenings with friends. The spice blend, inspired by known flavors, gives it a unique and delicious taste. The chicken meat remains tender and juicy thanks to the pre-cooking in a fragrant broth. Quick frying ensures perfect crispiness. Accompanied by homemade mayonnaise and ketchup, it is a dish that pleases everyone. A real treat for the taste buds, easy to prepare and always appreciated!

  • 1 kg Chicken
  • 2 tasse(s) Flour
  • 2 c. à café Salt
  • 2 c. à café White pepper
  • 2 c. à café Basil
  • 2 c. à café Cumin
  • 2 c. à café Oregano
  • 2 c. à café Paprika
  • 2 c. à café Dijon mustard
  • 2 c. à café Parsley
  • 1 c. à café Baking soda
  • 1 piece Onion(s)
  • 1 clove Garlic
  • 2 c. à café Ginger
  • 2 piece Egg(s)
  • 1 cube Chicken broth

Chop the garlic and onion

Put 1 onion, cut into quarters, in the bowl and chop 3 Sek./Stufe 5. Transfer to another container. Then, put 1 clove of garlic in the bowl and chop 3 Sek./Stufe 7. Transfer with the chopped onion.

Cook the chicken in the broth

Thermomix® Setting

Cut 1 kg of chicken into pieces. Put the chopped onion and garlic in the bowl. Add the chicken pieces and 1 cube of chicken broth. Fill the bowl with water until the chicken is covered. Cook 35 Min./100°C/Stufe 1.

Prepare the marinade

In a large bowl, mix 2 eggs, 1 tsp of baking soda, 2 tsp of salt, 2 tsp of ginger, 2 tsp of parsley, 2 tsp of Dijon mustard, 2 tsp of paprika, 2 tsp of oregano, 2 tsp of cumin, and 2 tsp of white pepper.

Marinate the chicken

When the chicken is cooked, add it to the marinade mixture. Mix well so that all the pieces are coated.

Prepare the breading

In another bowl, mix 2 cup(s) of flour with a little salt and pepper.

Bread and fry the chicken

Coat each piece of marinated chicken in the flour. Heat oil in a fryer or large skillet. Fry each piece for about 2 minutes until golden brown and crispy.

Serve

Let cool a little then serve in a large dish, accompanied by mayonnaise and ketchup.
