Description

These coconut shrimp are a true explosion of flavors! The crunchy coconut and panko breading wraps the succulent pulp of the shrimp, creating an irresistible contrast. I often prepare them for a delicious appetizer or as a light and tasty second course. The recipe is simple and quick, perfect for when you want something exotic and flavorful. The touch of black pepper enhances the sweet flavor of the coconut, making every bite an explosion of taste. Ideal to serve with a sweet and sour sauce or homemade mayonnaise. Ingredients (8 ingredients)

  • 450 g shrimp
  • 50 g type 00 flour
  • 2 piece eggs
  • 45 g panko
  • 85 g grated coconut
  • fine salt
  • pepper
  • frying oil

Preparation (10 steps)

Preparation of the shrimp

Shell the 450 g of shrimp, keeping the final part of the tail attached, and remove the gut. Set aside.

Preparation of the flour mixture

In the bowl, pour 50 g of type 00 flour, fine salt as needed and pepper as needed and mix for 10 Sec./Stufe 3.

Transfer of the flour mixture

Transfer the flour mixture to a bowl and set aside.

Preparation of the beaten eggs

In a second bowl, beat 2 eggs and set aside.

Preparation of the panko and coconut mixture

In the bowl, pour 45 g of panko and 85 g of grated coconut and mix for 5 Sec./Stufe 4.

Transfer of the panko and coconut mixture

Transfer the panko and coconut mixture to a third bowl and set aside.

Breading the shrimp

Pass each shrimp through the flour mixture so that it sticks well. Then dip them in the beaten eggs. Finally, cover them with the panko and coconut mixture, pressing gently to make the breading adhere well. As they are ready, put them on a plate.

Frying the shrimp

Heat the frying oil as needed in a large pan over medium heat and then fry the shrimp, not too many at a time. Cook each side for 2-3 minutes until golden brown.

Draining the shrimp

Drain the shrimp on a plate lined with absorbent paper.

Service

Serve the shrimp hot with a sauce of your choice.
