Description

These creamy veal croquettes are a reinvented classic to enjoy with family or friends. The minced meat, combined with the sweetness of the piquillo peppers and a touch of whiskey, creates an irresistible flavor. The béchamel, smooth and creamy thanks to the Thermomix®, is the secret to perfect croquettes. Although they require a bit of time, the result is worth it. Ideal as a starter in a special meal or as a tapa in an informal gathering. A crunchy bite on the outside and creamy on the inside that always triumphs!

Ingredients (12 ingredients)

  • 1 piece Onion
  • 50 gramos Butter
  • 1 can Piquillo peppers
  • 300 gramos Minced meat
  • 1 copa Whisky
  • 2 cucharadas soperas Flour
  • 250 mililitros Milk
  • 1 pinch Salt
  • 1 piece Egg
  • 1 pinch Pepper
  • 1 pack Breadcrumbs
  • 1 pinch Nutmeg

Preparation (7 steps)

Chop and sauté the onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Introduce 1 unit of onion into the bowl and chop for 3 seconds at speed 5. Add 50 grams of butter and sauté for 3 minutes at 120°C in speed 1.

Add peppers and meat

Thermomix® Setting
8 min/248°F/Speed 2 120

Add 1 can of finely chopped piquillo peppers and 300 grams of minced meat to the bowl. Cook for 8 minutes at 120°C in speed 2. Stir occasionally with the spatula to ensure even cooking.

Flambé with whisky

Thermomix® Setting
1 min/158°F/Speed 2 70

Add 1 glass of whisky to the bowl and program 1 minute at 70°C in speed 2, without the measuring cup, so that the alcohol evaporates.

Prepare the béchamel

Thermomix® Setting
7 min/194°F/Speed 4 90

Add 2 tablespoons of flour, 1 pinch of salt, 1 pinch of pepper and 1 pinch of nutmeg to the bowl. Program 2 minutes at 100°C in speed 3. Then, add 250 milliliters of milk little by little and program 7 minutes at 90°C in speed 4.

Cool the dough

Pour the dough into a container and let it cool completely at room temperature. Cover with transparent film touching the surface to prevent a crust from forming.

Form the croquettes

Once the dough is cold, form the croquettes with the desired shape. Pass each croquette through 1 unit of beaten egg and then through 1 package of breadcrumbs.

Fry the croquettes

Fry the croquettes in abundant hot oil until golden brown. Remove and place on absorbent paper to remove excess oil.
