Description

These vegetable croquettes are a creamy and vegan delight, perfect for an original snack or starter. The combination of chard, carrots and peppers, along with the exotic touch of ginger and curry, makes them irresistible. I often prepare them for my vegan friends and they are always a success. The recipe is simple and can be adapted to your favorite vegetables. In addition, they can be frozen to have them ready at any time. Go ahead and try them, you will be surprised! They are ideal for an informal dinner or to take to a picnic. The creamy texture and intense flavor make them a delicious and nutritious bite. Prepare them with the Thermomix® and enjoy an easy and fast culinary experience.

Ingredients (14 ingredients)

  • 1 bunch chard
  • 3 piece carrots
  • 1 piece onion
  • 1 tsp fresh grated ginger
  • 0.5 tsp fresh grated turmeric
  • 2 piece red peppers
  • 1 puñado pine nuts
  • 1 tsp curry powder
  • 0.5 container soy milk
  • 4 tbsp wheat flour
  • 1 tsp salt
  • 1 pinch black pepper
  • 2 tbsp oil
  • 0.5 container breadcrumbs

Preparation (9 steps)

Cook the chard

Fill a pot with salted water and bring to a boil. Cook the chard for 5-7 minutes until tender. Drain well and set aside.

Chop the vegetables

Cut 1 onion, 3 carrots and 2 red peppers into pieces. Put in the Thermomix bowl and chop for 5 Sec./Stufe 5. Lower the remains of the walls of the bowl with the spatula.

Sauté the vegetables

5 min/248°F/Speed 1 120

Add 2 tablespoons of oil to the bowl. Sauté the onion, carrot and pepper for 5 Min./120°C/Stufe 1.

Add the chard and spices

Thermomix® Setting
5 min/212°F/Speed 2 100

Incorporate the cooked and drained chard, 1 teaspoon of fresh grated ginger, ½ teaspoon of fresh grated turmeric, 1 teaspoon of curry powder, 1 teaspoon of salt and 1 pinch of black pepper to the bowl. Cook for 5 Min./100°C/Stufe 2.

Add flour and soy milk

Thermomix® Setting

Add 4 tablespoons of wheat flour and ½ cup of soy milk to the bowl. Mix for 30 Seg./Stufe 4.

Incorporate the pine nuts

Add 1 handful of pine nuts to the bowl and mix with the spatula to integrate them into the dough.

Cool the dough

Pour the dough into a container and let it cool completely in the refrigerator for at least 30 minutes to make it easier to handle.

Form the croquettes

Take small portions of dough with your hands and form oval croquettes. Pass each croquette through ½ cup of breadcrumbs, making sure they are well covered.

Fry the croquettes

Heat abundant oil in a pan over medium heat. Fry the croquettes until golden brown on all sides. Remove and place on absorbent paper to remove excess oil.
