Description

These homemade poultry croquettes are a crispy and flavorful delight, perfect for a gourmet appetizer or a comforting starter. I often prepare them for Sunday brunches, and they always disappear in the blink of an eye! The minced poultry, mixed with onion, garlic, and fresh parsley, offers a smooth texture and a delicate taste. The crispy breadcrumbs add a touch of irresistible deliciousness. These croquettes are ideal for using leftover roast chicken, making them an economical and anti-waste dish. They are eaten hot, accompanied by a fresh green salad or a homemade tomato sauce. A real treat for the whole family!

  • 500 g Chicken breast(s)
  • 1 piece Onion(s)
  • 2 clove Garlic
  • 4 piece Whole egg(s)
  • 0.5 bunch Fresh parsley
  • Breadcrumbs
  • Sunflower oil
  • Salt
  • Pepper

Preparation (7 steps)

Chop the onion

Put 1 onion in the Thermomix bowl and chop finely for 3 Sek./Stufe 5.

Chop the chicken breasts

Cut 500 g of chicken breasts into pieces and put them in the Thermomix bowl. Chop finely for 5 Sek./Stufe 5.

Chop the parsley

Thermomix® Setting

Clean and dry 0.5 bunch of fresh parsley. Put the parsley in the Thermomix bowl and chop finely for 3 Sek./Stufe 7.

Mix the ingredients

In a large salad bowl, mix the minced chicken, the chopped onion, 2 minced cloves of garlic, 4 whole eggs and the chopped parsley. Salt and pepper to your taste. Mix all the ingredients well.

Form the croquettes

Pour a base of breadcrumbs into a shallow plate. Using a tablespoon, shape balls with the chicken preparation. Roll each chicken ball in the breadcrumbs. Place the breaded chicken balls in a large plate as you go.

Cook the croquettes in the frying pan

Heat a base of sunflower oil in a frying pan. When the sunflower oil is well heated, place several breaded chicken balls in the frying pan and brown them for a few minutes, stirring them regularly, until they are nicely golden brown.

Drain and serve

At the end of cooking, remove the chicken croquettes from the frying pan, using a skimmer, and drain them on absorbent paper. Repeat the cooking operation for all the other breaded chicken balls. Serve the chicken croquettes very hot topped with a coulis or a homemade tomato saute.
