Description

These mushroom crostini with goat cheese are a delicious and easy appetizer to prepare, perfect for a dinner with friends or a tasty aperitif. The oyster mushrooms, sautéed in a pan with garlic and parsley, perfectly match the creaminess of the goat cheese and the crunchiness of the toasted rustic bread.   • 500 g oyster mushrooms
  • 4 fette rustic bread
  • 150 g goat cheese
  • 1 clove garlic
  • parsley
  • olive oil
  • fine salt

Preparing the mushrooms

Tear 500 g of already cleaned oyster mushrooms by hand and put them in a bowl. This step is important to ensure even cooking and a pleasant consistency.

Chop the parsley

Put a bunch of parsley in the bowl and chop for 3 Sec./Speed 8. Transfer the chopped parsley to a bowl and set aside.

Sauté the garlic

Pour a drizzle of olive oil into the bowl, add 1 clove of garlic and sauté for 3 Min./120°C/Speed 1.

Cook the mushrooms

Add the shredded mushrooms, a pinch of fine salt and cook for 10 Min./100°C/Speed 2. Place the lid on the bowl.

Dry the mushrooms

Thermomix® Setting
10 min/Varoma/Speed 2 Varoma

Add the chopped parsley and cook without the lid for another 10 Min./Varoma/Speed 2, so that the mushrooms dry and a light golden crust forms.

Prepare the cheese

Cut 150 g of goat cheese into thin slices and set aside.

Prepare the bread

Cut 4 slices of rustic bread into slices about 2 cm thick and make the crostini.

Toast the bread

Toast the slices of bread on a hot plate sprinkled with spray oil. Spray a little oil also on the bread, turning the slices to toast them on both sides. This step is not performed in the Thermomix.

Melt the cheese

Add the slices of cheese on the bread and heat for 2 Min./60°C/Speed 1, Left rotation, to melt the cheese.

Assemble the crostini

Put the slices of bread on a cutting board and add a generous amount of mushrooms on each.

Complete and serve

Complete with a drizzle of raw oil and fresh thyme. Serve the hot crostini.
