Description

This plum casserole with curd cheese is a wonderfully fruity and creamy dessert that tastes especially good in autumn. The combination of juicy plums, crispy ladyfingers and an airy curd cheese mixture makes it a real treat. I like to make it when I'm expecting visitors, as it can be prepared well in advance. The slight acidity of the plums harmonises perfectly with the sweetness of the casserole. If you like, you can add some cinnamon to the curd cheese mixture. A spoonful of vanilla ice cream rounds the whole thing off. Simply delicious!

Ingredients (12 ingredients)

  • 90 g Sugar
  • 1 Msp. Cinnamon powder
  • 50 g Butter
  • 80 g Ladyfingers
  • 700 g Plums
  • 100 ml Orange juice freshly squeezed
  • 2 piece Eggs
  • 30 g Powdered sugar sifted
  • 250 g Low-fat curd cheese
  • 1 piece Organic lemon thinly grated peel
  • 2 tsp Cornstarch
  • 2 tbsp Plum brandy

Preparation (11 steps)

Prepare and cook the plums

Thermomix® Setting
5 min/212°F/Speed 1 100

Wash, pit and quarter the plums. Put 30 g sugar and 100 ml freshly squeezed orange juice into the mixing bowl and simmer for 5 min./100°C/speed 1 until syrupy. Add the quartered plums and stir in for 10 min./100°C/reverse rotation speed 1. Then transfer to a bowl and let cool.

Stir in plums

Add the quartered plums and stir in for 10 min./100°C/reverse rotation speed 1. Then transfer to a bowl and let cool.

Prepare casserole dish

Thermomix® Setting
5 sec/Speed 10

Put 20 g sugar and 1 pinch of cinnamon powder into the mixing bowl and mix for 5 sec./speed 10. Grease a casserole dish with 10 g butter and sprinkle with the cinnamon sugar. Roughly crumble the ladyfingers.

Preheat oven

Preheat the oven to 200 °C top/bottom heat or 180 °C fan oven.

Separate eggs and whisk egg whites

Separate eggs. Place egg whites with the remaining sugar (40g) in the mixing bowl and whisk until stiff with the butterfly 3 min./speed 3.5. Transfer and set aside.

Prepare curd cheese mixture

Put the remaining butter (40g) and 30 g powdered sugar in the mixing bowl and whisk until creamy for 2 min./speed 4. Add the egg yolks one at a time and stir in for 15 sec./speed 3 each. Add low-fat curd cheese and the thinly grated peel of 1 organic lemon and fold in for 20 sec./speed 3.

Fold in curd cheese and lemon peel

20 sec/Speed 3

Add low-fat curd cheese and the thinly grated peel of 1 organic lemon and fold in for 20 sec./speed 3.

Fold in egg whites

Mix the egg whites with the cornstarch (2 tsp) and carefully fold into the curd cheese mixture with a whisk.

Layer casserole

Spread the plums with the syrup evenly in the casserole dish, sprinkle the crumbled ladyfingers over the top and drizzle with plum brandy. Use a spoon to place dollops of the curd cheese mixture on top of the plums.

Bake casserole

Bake the casserole on the 2nd shelf from the bottom for 25 minutes (only 20 minutes with fan oven) until the edges turn brown. Immediately sprinkle with powdered sugar and serve.
