Ingredients (14 ingredients)

  • 4 Stück Rabbit legs
  • 2 EL Olive oil
  • 1 TL Sweet paprika powder
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 2 Stück Onions
  • 2 Zehe Garlic
  • 20 g Thyme (fresh)
  • 20 g Rosemary (fresh)
  • 1 EL Clarified butter
  • 200 ml White wine (dry)
  • 200 ml Veal or beef stock
  • 1 Blatt Bay leaf
  • 1 Prise Sugar

Preparation (9 steps)

Prepare rabbit legs

Preheat the oven to 180 °C top and bottom heat. Remove tendons, skin and fat from the rabbit legs. This is a preparation step outside of the Thermomix.

Prepare marinade

Mix 2 tbsp olive oil, 1 tsp sweet paprika powder, a generous pinch of salt and pepper in a bowl. Rub the rabbit legs with it. This is a preparation step outside of the Thermomix.

Prepare onions and garlic

Peel and halve 2 onions and place in the mixing bowl. Chop 3 sec/speed 5. Scrape down the sides with the spatula.

Chop garlic

Thermomix® Setting

Add 2 cloves of garlic and chop 3 sec/speed 7. Scrape down the sides with the spatula.

Sauté onions and garlic

3 min/248°F/Speed 1 120

Add 1 tbsp clarified butter to the onions and garlic in the mixing bowl and sauté 3 min/120°C/speed 1.

Sear the rabbit legs

Heat clarified butter in a roasting pan and sear the meat pieces on all sides. Add the onions and garlic and fry for a few minutes. This is a step outside of the Thermomix.

Prepare sauce

Place the seared rabbit legs in a roasting pan. Add 200 ml white wine (dry), 200 ml veal or beef stock, 20 g thyme (fresh), 20 g rosemary (fresh), 1 bay leaf and 1 pinch of sugar to the roasting pan.

Braising in the oven

Close the roasting pan with a lid and braise the rabbit legs in the oven for about 1 hour and 30 minutes. After 1 hour, remove the lid so that the broth can reduce a little. During this time, baste the legs with the roasting juices several times. This is a step outside of the Thermomix.

Season the sauce

Season the sauce with salt, pepper and sugar as needed and serve the rabbit legs with the sauce. This is a step outside of the Thermomix.
