Description

This dish of chicken thighs in Thai sweet and sour sauce is an explosion of flavors that will transport you to Southeast Asia. The combination of juicy chicken with sweet and spicy sauce is simply irresistible. I prepare it often because it is very easy and quick to make, perfect for a weekday dinner. In addition, it can be accompanied with basmati rice for a complete meal. If you like Thai food, this is your dish! You can adjust the level of spiciness by adding more or less chili to the sauce. Go ahead and try it!

Ingredients (8 ingredients)

  • 4 piece Chicken thighs
  • 2 piece Lime
  • 1 trozo Fresh ginger
  • 180 ml Sweet chili sauce
  • 1 pinch Salt
  • 1 pinch Ground black pepper
  • 1 bunch Fresh coriander (optional)
  • 1 pinch Vegetable oil

Preparation (8 steps)

Prepare the oven

Preheat the oven to 200°C with heat up and down.

Dry and season the chicken

Dry the chicken thighs with absorbent paper and season with salt and pepper to taste.

Brown the chicken in the pan

Heat a little vegetable oil in a pan and brown the chicken on all sides until the skin is golden brown. This will take approximately between 15 and 20 minutes.

Grate the lime and ginger

Grate the skin of a lime and squeeze its juice. Also grate a piece of fresh ginger. Place in the Thermomix glass.

Prepare the sauce

Thermomix® Setting

Add the lime juice, lime zest, grated ginger and 180 ml of sweet chili sauce to the Thermomix glass. Mix well.

Sauce the chicken

Remove the excess fat from the pan with the browned chicken. Pour the sauce over the chicken, making sure to cover all the pieces well.

Bake the chicken

Take the pan to the preheated oven and cook for 10 minutes, until the chicken is tender. Then, turn on the oven grill and cook for a few more minutes, until the sauce is almost crispy.

Serve

Serve immediately, accompanying the chicken with lime wedges and, if desired, a little fresh coriander.
