Description

These curd cheese cherry crumble coins are an absolute delight! I especially like to bake them in the summer when cherries are in season. The curd cheese oil dough is super juicy and the crumbles give the whole thing a crispy bite. The combination of sweet cherries and slightly sour curd cheese is simply unbeatable. The coins are perfect for Sunday brunch or as a sweet treat with coffee. They can also be prepared well in advance and are a real eye-catcher on any cake buffet. A recipe that is always well received by friends and family!

Ingredients (14 ingredients)

  • 250 g Desiccated coconut
  • 1 tsp Baking powder
  • 1 Pck. Baking powder
  • 360 g Flour
  • 125 g Butter
  • 175 g Low-fat curd cheese
  • 6 tbsp Milk
  • 6 tbsp Oil
  • 75 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 piece Egg (Size M)
  • 1 pinch Salt
  • 340 g Cherry jam
  • Flour

Preparation (8 steps)

Mix desiccated coconut and flour

Thermomix® Setting
10 sec/Speed 4

Put 250 g desiccated coconut, 1 tsp baking powder and 60 g flour into the mixing bowl and mix for 10 sec/speed 4. Transfer and set aside.

Make crumbles

Thermomix® Setting
20 sec/Speed 5

Add 125 g butter in flakes to the desiccated coconut and flour and process into crumbles for 20 sec/speed 5. Transfer and set aside.

Prepare curd cheese oil dough

Thermomix® Setting
20 sec/Speed 4

Put 175 g low-fat curd cheese, 6 tbsp milk, 6 tbsp oil, 75 g sugar, 1 packet vanilla sugar, 1 egg and 1 pinch of salt in the mixing bowl and mix for 20 sec/speed 4.

Knead dough

Thermomix® Setting
2 min/Kneading speed

Add 300 g flour and 1 packet baking powder and knead for 2 min/knead setting to a smooth dough.

Shape coins

Divide the dough into 8 equal pieces on a floured work surface. Shape into patties with floured hands and place 4 patties on a baking sheet lined with baking paper.

Top

Spread 1 jar (340 g) of cherry jam evenly on the patties and sprinkle the crumbles evenly on top.

Bake

Bake baking sheets one after the other in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 25 minutes.

Let cool

Remove from the oven, place on a wire rack and let cool.
