Description

This hearty cabbage stew with meat is a savory dish that warms you up, especially during the cold season. With sauerkraut, white cabbage, and a mixture of game, pork, and beef, it is rich in flavors and satisfying. Ingredients (19 ingredients)

  • 500 g Game meat, pork and beef mixed or only one type
  • 250 g Bacon, streaky
  • 250 g White cabbage
  • 500 g Sauerkraut
  • 1 Stück Apple, tart
  • 3 Stück Tomatoes
  • 3 Stück Onions
  • 2 Stück Garlic cloves
  • 6 Stück Allspice berries
  • 1 Stück Bay leaf
  • 2 EL Tomato paste
  • 2 EL Paprika powder
  • 125 ml Beef broth
  • 125 ml Red wine
  • Salt
  • Pepper
  • Marjoram
  • Caraway
  • 2 EL Lard

Preparation (8 steps)

Chop onions and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Add 3 peeled and halved onions to the mixing bowl and chop for 3 sec./level 5. Add 2 cloves of garlic and chop for another 3 sec./level 7. Use the spatula to push everything down from the edge.

Chop white cabbage

Thermomix® Setting
5 sec/Speed 4

Put 250 g of white cabbage in coarse pieces into the mixing bowl and chop for 5 sec./level 4. Transfer and set aside.

Fry bacon and meat

Heat 2 tbsp of lard in a large pan. Fry 250 g of diced bacon and 500 g of diced game, pork and beef in portions and then transfer to a fireproof dish.

Sauté onions and garlic

Sauté the chopped onions and garlic in the same pan in which the meat was fried.

Add vegetables and spices

Add the chopped white cabbage, 500 g sauerkraut, 1 diced apple, 3 peeled and diced tomatoes, 6 crushed allspice berries, 1 bay leaf, 2 tbsp tomato paste, 2 tbsp paprika powder, salt, pepper, marjoram and caraway to the pan with the onions and garlic. Mix everything well and fry briefly.

Mix meat and vegetables

Add the fried meat and bacon to the fireproof dish and mix with the vegetables. Season to taste.

Prepare broth and wine

Mix 125 ml beef broth and 125 ml red wine with the 2 tbsp tomato paste.

Add liquid and cook

Pour the broth-wine mixture over the meat and vegetables in the fireproof dish until the contents are just covered. If necessary, top up with some red wine or broth. Cover the dish and cook in a preheated oven at 220 °C top/bottom heat for about 2 to 3 hours.
