Description

Fine hazelnut wafers are a festive Christmas cookie recipe for the Thermomix® with baking wafers, egg whites, hazelnuts and sugar. Preparation takes about 60 minutes and yields about 40 pieces. Ideal as a festive dessert, finger food or for baking in the winter time. This vegetarian recipe is perfect for anyone who loves hazelnut cookies.

Ingredients (8 ingredients)

  • 40 Stück Baking wafers (Ø 4 cm)
  • 3 Stück Egg white (size M)
  • 1 Prise Salt
  • 1 TL Lemon juice
  • 150 g Sugar
  • 1 Pck. Vanilla sugar
  • 200 g Hazelnuts (ground)
  • 1 Msp. Cinnamon

Preparation (7 steps)

Preheat oven and prepare wafers

Preheat the oven to 150 °C (top/bottom heat). Line a baking sheet with baking paper and spread the baking wafers (Ø 4 cm) on it.

Beat egg whites until stiff

Insert the whisk into the mixing bowl. Add 3 egg whites (size M), 1 pinch of salt and 1 tsp of lemon juice to the mixing bowl and whisk with the whisk inserted for 3 min./speed 3.5 until stiff peaks form.

Sprinkle in sugar

2 min/Speed 3.5

Slowly sprinkle 150 g of sugar and 1 packet of vanilla sugar into the mixing bowl and continue whisking with the whisk inserted for another 2 min./speed 3.5 until the mixture is firm and glossy.

Fold in hazelnuts and cinnamon

Thermomix® Setting
20 sec/Linkslauf/Speed 2 Reverse

Remove the whisk. Add 200 g of ground hazelnuts and 1 pinch of cinnamon to the mixing bowl and carefully fold in for 20 sec/reverse/speed 2 until well distributed. Use the spatula to scrape down from the edge and mix for another 5 sec/reverse/speed 2 if necessary.

Pipe mixture onto wafers

Fill the mixture into a piping bag and use it to place small piles on the wafers.

Bake hazelnut macaroons

Bake the hazelnut macaroons in the preheated oven at 150 °C (top/bottom heat) for 18-20 minutes until they are lightly golden brown. They should still be soft inside.

Let cool

Remove the hazelnut macaroons from the oven and let them cool completely on a wire rack.
