Description

This refreshing Lemon and Mint Mousse is an absolute delight for warm summer days! I like to make it again and again because it is so light and quick to prepare. The combination of creamy mascarpone, tangy lime juice and fresh mint is simply unbeatable. Perfect as a light dessert after a rich meal or just in between. The mousse is vegetarian and gluten-free, so suitable for many. A small shot of rum provides that certain something, but can also be omitted. Enjoy!

Ingredients (6 ingredients)

  • 140 g fresh cream
  • 40 g icing sugar
  • 160 g mascarpone
  • 40 ml rum
  • 40 ml lemon juice
  • fresh mint

Fresh cream and icing sugar in the bowl

Pour 140 g of fresh cream and 40 g of icing sugar into the bowl.

Whip the cream

Add mascarpone, rum and lemon juice

Add 160 g of mascarpone, 40 ml of rum and 40 ml of lemon juice into the bowl.

Mix gently for 20 Sec./Speed 2 with the butterfly whisk.

Add the fresh mint to taste into the bowl and mix for 5 Sec./Speed 4.

Pour the mousse into 4 individual bowls and chill in the refrigerator for at least 3 hours before serving.
