Description

These semolina dumplings are a wonderfully simple and filling dish that evokes childhood memories. With the Thermomix® they are ready in no time! The durum wheat semolina ensures a pleasant consistency, while butter and nutmeg give the dish a fine note. Whether as an addition to a clear broth or as a side dish to vegetables - these dumplings are versatile. I personally like them best cooked in salt water and then added to the broth just before serving, so that it remains nice and clear. A quick and tasty dish for cold days!

Ingredients (6 ingredients)

  • 0.25 Liter Milk
  • 100 g Durum wheat semolina
  • 30 g Butter
  • 1 piece Egg
  • to taste Salt
  • to taste Nutmeg

Preparation (6 steps)

Heat milk

Thermomix® Setting
5 min/212°F/Speed 1 100

Add 0.25 liters of milk, 30 g of butter, salt and nutmeg to the mixing bowl and heat for 5 min./100°C/speed 1.

Stir in semolina

Thermomix® Setting
3 min/194°F/Speed 3 90

Slowly sprinkle 100 g of durum wheat semolina into the mixing bowl and stir for 3 min./90°C/speed 3 until the mixture comes away from the bottom of the bowl. Use a spatula to push the mixture away from the edge.

Cool dough

Pour the dough into a bowl and let it cool.

Incorporate egg

Thermomix® Setting
30 sec/Speed 3

After cooling, add 1 egg to the dough and mix for 30 sec./speed 3.

Form dumplings

Use two teaspoons (or tablespoons) to form dumplings and place in a pot of hot water. Dip the spoons into a cup of hot water after each dumpling.

Simmer dumplings

Simmer the dumplings in a pot of hot water for about 10 minutes until they float to the surface.
