Description

This baked tomato and onion dish is a simple yet flavorful vegetarian delight. I've been making this recipe for years, and it's always a hit! The sweetness of the onions perfectly complements the juicy tomatoes, creating a wonderful Mediterranean flavor profile. It's perfect as a side dish or a light main course, especially during the summer months when tomatoes are at their peak. The crunchy breadcrumb topping adds a delightful texture to every bite. This dish is easy to prepare and can be enjoyed warm or at room temperature.

Ingredients (7 ingredients)

  • 3 piece onions
  • 3 clove garlic cloves
  • 4 tbsp olive oil
  • 1.2 kg mixed tomato
  • 8 piece thyme
  • 1 tbsp golden caster sugar
  • 85 g fresh white breadcrumbs

Prepare the onions and garlic

Peel the onions and garlic cloves. Cut the onions into quarters. Place the onions and garlic cloves into the mixing bowl and chop for 3 sec/speed 5.

Sauté the onions and garlic

Add half of the olive oil (2 tbsp) to the mixing bowl. Sauté the onions and garlic for 15 min/120°C/speed 1 until softened, ensuring they don't brown. Use the spatula to scrape down the sides of the mixing bowl if needed.

Combine ingredients

Preheat oven to 180°C (160°C fan/gas mark 4). In a large baking dish, combine the sautéed onions and garlic, mixed tomatoes (halved if large), thyme sprigs, golden caster sugar, and fresh white breadcrumbs. Season well with salt and pepper and toss everything together to combine.

Bake the gratin

Drizzle the remaining olive oil (2 tbsp) over the tomato mixture. Scatter a few more thyme sprigs on top. Bake in the preheated oven for 1 hour, or until the top is golden brown and the tomatoes are juicy.
