About this recipe

These cheese-ham swirls are a recipe that has existed in my family for years. My grandmother always made them for birthdays or family celebrations, and the smell of freshly baked puff pastry and cheese is inextricably linked to these beautiful memories for me. I have adapted the recipe a little over time, but the basic idea is still the same: a simple, hearty snack that everyone likes. The puff pastry forms the basis for the swirls. It provides the crispy, slightly flaky texture that is so typical of this pastry. The cooked ham brings a salty, spicy note that harmonizes perfectly with the mild cheese. I prefer to use Gouda or Emmental, but other cheeses such as Cheddar or mountain cheese also work well. The sour cream acts as a binder and ensures a creamy consistency. It is seasoned with salt, pepper and granulated garlic to intensify the flavor of the swirls. The fresh chives add a fine, grassy note and round off the taste profile. The preparation in the Thermomix® is very simple. First, the sour cream is mixed with the spices and chives. This is particularly quick and even in the Thermomix®. This ensures that the aroma is optimally distributed. Make sure not to mix the chives for too long so that they do not become mushy. Then roll out the puff pastry and spread with the seasoned sour cream. Here it is important to distribute the sour cream evenly so that each swirl has the full flavor. The diced cooked ham and grated cheese are then distributed on the sour cream. Now the puff pastry is rolled up tightly from the wide side. This works best if you put the puff pastry on a kitchen towel and roll it up with the help of the towel. This prevents the dough from tearing. The roll is then cut into slices about 1.5 cm thick. The best way to do this is with a sharp knife or a pizza cutter. The swirls are placed on a baking sheet lined with baking paper and baked in a preheated oven until golden brown. For a vegetarian version, you can simply omit the cooked ham or replace it with other ingredients such as olives, dried tomatoes or peppers. If you like it vegan, you can replace the sour cream with a vegan alternative based on cashew or soy and the cheese with vegan grated cheese. There are no limits to your imagination when it comes to spices. Paprika powder, chili or herbs of Provence also go well with the swirls. The cheese-ham swirls taste warm and cold. They are an ideal snack for parties, buffets or a cozy brunch. You can enjoy them pure or serve them with a dip. A herb curd, a garlic dip or a tomato chutney go perfectly with them. The swirls can be prepared well. You can roll them up and cut them the day before and then store them in the refrigerator. Before baking, they only have to be placed on the baking sheet. Baked swirls can be stored in an airtight container in the refrigerator. They still taste good the next day, but they are not quite as crispy. But you can briefly warm them up in the oven to make them crispy again.
