Description

This vegetarian bell pepper dip is prepared in the Thermomix® and impresses with roasted pine nuts, basil and red chili. Ideal as a Mediterranean dip for grilled food, as a summer snack or for the next party. The preparation time is 40 minutes and yields about 4 servings. Perfect as finger food or appetizer for lovers of light cuisine.

Ingredients (11 ingredients)

  • 4 Stück red bell peppers
  • 4 Stiele Basil
  • 2 Stück Garlic cloves (peeled)
  • 1 Stück red Chili pepper (chopped)
  • 3 EL Pine nuts (roasted)
  • 2 EL Tomato paste
  • 3 EL Olive oil
  • 2 EL Parmesan (grated)
  • Red wine vinegar
  • Salt
  • Honey

Preparation (6 steps)

Prepare bell peppers

Wash 4 red bell peppers, brush with oil and grill on a hot grill, turning, until the bell pepper skin has black blisters. Let cool covered, halve, peel and remove seeds.

Prepare basil

Pluck leaves from 4 stems of basil.

Chop garlic

Put 2 garlic cloves (peeled) in the mixing bowl and chop.

Add chili pepper

Add 1 red chili pepper (chopped).

Puree dip

Put the prepared bell peppers, basil leaves, 3 tbsp pine nuts (roasted), 2 tbsp tomato paste, 3-4 tbsp olive oil and 2-3 tbsp Parmesan (grated) in the mixing bowl and puree.

Season and serve

Season the dip with red wine vinegar, salt and honey and pour into a bowl.
