Description

This dish of gilt-head bream in fresh cherry tomato sauce is a true triumph of Mediterranean flavors! Prepared with the Thermomix®, it is surprisingly simple and quick to make. The gilt-head bream, delicate and flavorful, goes perfectly with the sweetness of the cherry tomatoes and the aroma of garlic and parsley. Ideal for a light but tasty dinner, this dish is perfect for those who love authentic and genuine flavors. I often prepare it in the summer, when the cherry tomatoes are at their best, and I serve it with a side of fresh vegetables. A guaranteed success!

Ingredients (8 ingredients)

  • 1 piece large gilt-head bream
  • 300 g cherry tomatoes
  • 1 clove garlic
  • 100 g white wine
  • 100 g water
  • parsley
  • olive oil
  • fine salt

Preparation of cherry tomatoes

Wash 300 g of cherry tomatoes thoroughly and cut them in half. Set aside.

Aromatic sauté

Pour a generous drizzle of olive oil into the Thermomix bowl. Add 1 whole clove of garlic and a few sprigs of parsley. Sauté for 3 Min./120°C/Speed 1.

Adding the cherry tomatoes

Thermomix® Setting
5 min/212°F/Speed 1 100

Add the halved cherry tomatoes to the bowl and flavor for 5 Min./100°C/Speed 1.

Cooking the gilt-head bream

Thermomix® Setting
3 min/212°F/Speed 1/Linkslauf 100 Reverse

Gently place 1 large gilt-head bream, cleaned and gutted, in the bowl on top of the cherry tomatoes. Cook for 3 Min./100°C/Speed 1/Reverse.

Deglazing with white wine

Thermomix® Setting
2 min/212°F/Speed 1/Linkslauf 100 Reverse

Gently turn the gilt-head bream over. Deglaze with 100 g of white wine and cook for 2 Min./100°C/Speed 1/Reverse, to evaporate the alcohol.

Adding water and salt

Add 100 g of water and fine salt to taste in the bowl. Gently mix with the spatula.

Final cooking

Thermomix® Setting
10 min/212°F/Speed 1/Linkslauf 100 Reverse

Cover the bowl with the lid and cook for 10 Min./100°C/Speed 1/Reverse, until the gilt-head bream is cooked and tender.
