Description

This recipe for grilled sea bream is an absolute highlight for the grilling season! The fresh herbs and lemon give the fish a wonderful aroma that harmonizes perfectly with the light tomato olive salad. I especially like to make this dish when I have guests because it can be prepared well in advance. The salad is quick to prepare and the fish can be cooked on the grill in the meantime. A Mediterranean taste experience that simply tastes delicious and is perfect for a balmy summer evening. If you like, you can crumble some feta cheese over the salad.

Ingredients (14 ingredients)

  • 1 clove Garlic
  • 0.5 bunch Basil
  • 1 piece Untreated lemon
  • 4 piece Sea bream (à approx. 300 g)
  • Sea salt
  • 4 piece Banana leaves
  • 1 bunch Chives
  • 370 ml Green olives without pit
  • 750 g Tomatoes
  • 3 tbsp Balsamic vinegar
  • Salt
  • Pepper
  • Sugar
  • 3 tbsp Olive oil

Preparation (7 steps)

Prepare garlic, basil and lemon zest

Thermomix® Setting

Place 1 clove of garlic in the mixing bowl and chop for 3 sec./level 7. Wash ½ bunch of basil, pat dry, pluck off the leaves and place in the mixing bowl. Wash 1 untreated lemon with hot water, rub dry and grate the peel and add to the mixing bowl. Chop and mix everything together for 5 sec./level 5. Scrape down from the edge with the spatula.

Prepare sea bream

Wash 4 sea bream (à approx. 300 g), pat dry and cut diagonally on both sides towards the bones. Add the prepared basil lemon gremolata and sea salt in the spaces. Season the fish on the outside with sea salt.

Prepare chives

Wash 1 bunch of chives, pat dry and cut into rings, except for some for garnish. Set aside.

Prepare tomato olive salad

Drain 1 glass (370 ml) of green olives without stones in a sieve. Wash, clean and cut 750 g of tomatoes into pieces. Put both in a bowl.

Prepare vinaigrette

Thermomix® Setting
10 sec/Speed 3

Put 3 tbsp balsamic vinegar, salt, pepper and sugar in the mixing bowl and stir for 10 sec./level 3. Then, with the knife running (level 3), add 3 tbsp olive oil drop by drop.

Mix salad

Add the vinaigrette to the tomatoes and olives in the bowl. Add the prepared chives and mix everything carefully.

Season salad

Season the salad again with salt and pepper.
