Description

This rhubarb cake is a delicious recipe for spring. With fresh rhubarb and a crispy streusel topping, it's a perfect cake for brunch or as a dessert. Preparation takes about 90 minutes and yields 24 servings. Ideal for festive occasions.

Ingredients (9 ingredients)

  • 1.25 kg Rhubarb
  • 650 g Flour
  • 300 g Sugar
  • 420 g Butter
  • 4 Stück Eggs (Size M)
  • Salt
  • 2 TL Baking powder
  • Powdered sugar
  • Flour for dusting

Preparation (9 steps)

Prepare baking sheet

Grease a baking sheet (approx. 32 x 39 cm) thoroughly and dust with some flour. Set aside.

Prepare rhubarb

Clean, wash, and cut 1125 g rhubarb into 1-2 cm long pieces. Set aside.

Prepare streusel

Place 250 g flour, 100 g sugar, and 170 g butter in pieces into the mixing bowl and process into streusel for 20 sec/level 4. Refrigerate until further use.

Prepare batter

Place 250 g butter, 200 g sugar, and 1 pinch of salt into the mixing bowl and stir until fluffy for 2 min/level 3.

Add eggs

Add 4 eggs (size M) one after the other and stir in for 30 sec/level 3.

Mix flour and baking powder

Mix 400 g flour and 2 tsp baking powder, add to the mixing bowl and briefly stir into the dough using the Meistermix Patix dough knife. 2 min/knead setting

Spread and top dough

Spread the dough evenly on the prepared baking sheet. First distribute the rhubarb pieces, then the streusel evenly on top.

Baking

Bake the rhubarb cake in a preheated oven (electric oven: 200 °C/convection: 175 °C/ gas: level 3) for 45-50 minutes, then let cool.

Dust with powdered sugar and serve as desired.
