Description

This spicy lemon ginger elixir is a true all-rounder! I especially like to make it in winter when a cold is coming on. The ginger warms from the inside, the lemon provides a good dose of vitamin C and the honey provides a pleasant sweetness. You can enjoy it hot as a tea or cold as a refreshing lemonade. A dash in hot water or tea is simply soothing. If you like, you can add some fennel seeds for an additional flavor note. The elixir can be kept in the refrigerator for several months - perfect for always having a supply!

Ingredients (5 ingredients)

  • 300 g Ginger in coarse pieces
  • 5 piece Lemons untreated
  • 1 Liter Water
  • 2 tsp Fennel seeds optional
  • 500 g Honey or sugar

Chop ginger and lemon peel

Put 300 g ginger in coarse pieces and the peel of 5 untreated lemons (thinly peeled) into the mixing bowl. Chop 10 sec./speed 7. Scrape down with the spatula.

Cook syrup

Thermomix® Setting
30 min/212°F/Speed 1 100

Add 1 liter of water and optionally 2 tsp of fennel seeds to the mixing bowl. If sugar is used instead of honey, add 500 g sugar now. Cook everything for about 30 min./100°C/speed 1 without a measuring cup.

Prepare bottles

While the syrup is cooking, rinse bottles with boiling water. It is best to choose several small bottles to extend the shelf life.

Squeeze lemons

Set aside the squeezed juice of the 5 lemons.

Filter and refine syrup

15 min/104°F/Speed 1 40

Place a sieve on a saucepan and pour the contents of the mixing bowl into it. Pour the sieved liquid back into the mixing bowl and let it cool for 15 min./40°C/speed 1. Then add the lemon juice and 500 g honey and stir for 30 sec./speed 3.

Fill syrup

Pour the still hot syrup into the rinsed bottles and store in the refrigerator for a few months after cooling.
