Description

This anchovy pie with vegetables is a traditional Spanish recipe that always triumphs. The combination of the anchovy flavor with fresh vegetables and the crunchy touch of the dough makes it irresistible. Perfect to share in a family meal or as an appetizer at a party. The dough, made in the Thermomix®, is very soft and easy to work with. Dare to prepare it, you will love it! You can vary the vegetables according to the season and add a little spicy paprika to give it a more intense touch. A simple and delicious recipe that will transport you to the Mediterranean coast!

Ingredients (12 ingredients)

  • 600 gramos plain flour
  • 200 mililitros oil
  • 190 ml white wine
  • 12 gramos salt
  • 5 gramos sweet paprika
  • 1 piece egg
  • 500 gramos anchovies
  • 1 piece onion
  • 1 piece red pepper
  • 1 piece courgette
  • 200 gramos homemade fried tomato
  • to taste Oil and salt

Preparation (8 steps)

Prepare the onion and pepper

Thermomix® Setting

Dice the onion and the red pepper. Place the onion in the Thermomix bowl and chop 3 Sec./Speed 5. Add the red pepper and 30 ml of oil and sauté 5 Min./120°C/Speed 1.

Add the courgette

Dice the courgette. Add the courgette to the Thermomix bowl, season with salt and pepper and cook 7 Min./120°C/Speed 1.

Incorporate the fried tomato

Thermomix® Setting
3 min/212°F/Speed 1 100

Add 200 g of homemade fried tomato to the Thermomix bowl and sauté 3 Min./100°C/Speed 1. Pour the mixture into a strainer to remove excess liquid.

Prepare the anchovies

Remove the head and backbone from the anchovies, wash with water and dry with paper towels. Set aside.

Prepare the dough

5 Seg./Speed 4

Put 600 g of plain flour, 12 g of salt and 5 g of sweet paprika in the Thermomix bowl and mix 5 Sec./Speed 4. Heat 200 ml of oil in a pan until hot. Pour the hot oil into the Thermomix bowl.

Knead the dough

Thermomix® Setting
2 min/Kneading speed

Add 190 ml of white wine to the Thermomix bowl and knead 2 Min./Knead setting. Divide the dough into two portions (one larger than the other), wrap in cling film and let rest for 10 minutes.

Assemble the pie

Roll out the largest portion of dough to a thickness of 2 mm. Place the dough on a baking tray with baking paper. Spread all the vegetables over the dough and place the anchovies on top, leaving a border around without filling.

Cover and bake

Roll out the other portion of dough and place it on top, leaving it a little smaller. Fold all the edges and prick the top with a fork. Brush with beaten egg and bake at 200 degrees for 40 minutes.
