Description

This Galician-style octopus pie is a traditional dish that is always a hit at home. The dough, made with strong flour and pastry flour, is crispy and tasty. The filling of octopus, spring onion and pepper (optional) is juicy and full of flavour thanks to the sweet paprika and extra virgin olive oil. Perfect for a special dinner or to share at a party. Ingredients (9 ingredients)

  • 400 g Cooked octopus
  • 2 piece Spring onion
  • 1 piece Small Italian green pepper (optional)
  • 10 g Sweet paprika
  • 100 ml Extra virgin olive oil
  • 150 g Strong flour
  • 150 g Pastry flour
  • 5 g Salt
  • 3 g Dry baker's yeast

Chop the spring onion and pepper

Cut the spring onions into quarters and the green pepper (if used) into pieces. Put them in the bowl and chop 3 Sec./level 5. Lower the remains of the walls of the glass with the spatula.

Sauté the vegetables

Add 100 ml of extra virgin olive oil to the bowl. Sauté the vegetables 8 Min./120°C/level 1. Add a pinch of salt.

Add the paprika and octopus

Add 10 g of sweet paprika and 400 g of cooked octopus cut into not very large pieces to the bowl. Cook 3 Min./100°C/Reverse operation level 1, stirring with the spatula so that the flavours are impregnated.

Drain the filling

Pour the contents of the bowl into a colander placed over a container. Drain the oil well and reserve 100 ml of it.

Prepare the dough

In the clean bowl, add 150 g of strong flour, 150 g of pastry flour, 5 g of salt and 3 g of dry baker's yeast. Mix 5 Sec./level 4.

Knead the dough

Add the 100 ml of reserved olive oil and 150 ml of water to the bowl. Knead 3 Min./kneading level. Form a ball with the dough, place in a covered container and let rise in a warm place for approximately 1 hour, or until doubled in size.

Roll out the dough

Preheat the oven to 180ºC. Divide the dough into two parts, one slightly larger than the other. Roll out both parts with a rolling pin until you get two circles or rectangles the size of the mold.

Fill the pie

Place the largest dough on the base of the mold. Pour the octopus filling over the dough, pressing well. Cover with the other dough and seal the edges.

Bake the pie

Open a hole in the center of the pie and prick the dough with a fork. Paint the surface with olive oil mixed with a little paprika. Bake for 35-40 minutes, or until golden brown.
