Description

These dumplings with sauerkraut-mushroom-filling are a hearty main course, ideal for autumn. The filling of sauerkraut, mushrooms, onions and garlic is prepared in the Thermomix® and then baked in homemade dumplings. The recipe is designed for 4 servings and has a medium level of difficulty.

Ingredients (14 ingredients)

  • 375 g Flour
  • 0.5 TL Salt
  • 2 Stück Eggs
  • 1 EL Oil
  • 60 ml Water
  • 1 Stück Onion
  • 1 Stück Garlic clove
  • 300 g Sauerkraut
  • 200 g Mushrooms
  • 1 EL Oil
  • 1 Prise ground Caraway
  • 1 Prise Salt
  • 1 Prise Pepper
  • 40 g Butter

Preparation (11 steps)

Prepare dough

Thermomix® Setting

Add 345 g flour, 9.5 tsp salt, 2 eggs and 1 tbsp oil to the mixing bowl. Add 60 ml water and process into a smooth dough with the Patix dough knife for 2 min./kneading stage.

Let the dough rest

Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

Prepare onion and garlic

Peel and quarter 1 onion. Peel 1 clove of garlic.

Chop onion and garlic

Place the onion quarters and the clove of garlic in the mixing bowl and chop for 3 sec./level 5. Scrape down from the edge with the spatula.

Sauté onion and garlic

Add 1 tbsp oil and sauté for 3 min./120°C/level 1.

Prepare sauerkraut and mushrooms

Drain 300 g sauerkraut. Clean 200 g of mushrooms and slice them with the WunderSlicer V2 and the fine slicer. Place the WunderSlicer V2 on the mixing bowl lid and cut the mushrooms directly into the mixing bowl.

Prepare filling

Add sauerkraut, mushrooms, 1 tbsp oil, 1 pinch of ground caraway, salt and pepper and cook for 10 min./100°C/reverse/level 1.

Let the filling cool

Transfer the filling to a bowl and let it cool.

Form dumplings

Roll out the dough thinly on a floured work surface and cut out circles (approx. 8 cm diameter). Put some filling on each circle, fold together and press the edges firmly.

Fry dumplings

Heat 40 g of butter in a pan and fry the dumplings in it until golden brown.

Serve

Serve the dumplings hot.
