Description

This hearty wild meat salad is a savory meal, ideal for colder days. The recipe combines tender wild boar meat with crunchy celery and pickled gherkins in a creamy sauce.   • 300 g Wild boar meat (or other game meat)
  • 100 g Onions
  • 100 g Celery
  • 100 g Pickled gherkins
  • 100 g Mayonnaise
  • 50 g Yogurt
  • 1 EL Mustard
  • 1 EL Vinegar
  • 1 TL Sugar
  • 20 g Oil
  • Salt
  • Pepper

Preparation (7 steps)

Chop onions

Put 100g onions into the mixing bowl and chop for 3 sec./speed 5.

Sauté onions

Add 20g oil to the chopped 100g onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Chop celery and pickled gherkins

Put 100g celery and 100g pickled gherkins into the mixing bowl and chop for 4 sec./speed 4.

Fry meat

Fry 300g wild boar meat (or other game meat) in a separate pan with a little oil until cooked through. Then let it cool and cut into bite-sized pieces.

Prepare salad dressing

Add 100g mayonnaise, 50g yogurt, 1 tbsp mustard, 1 tbsp vinegar, 1 tsp sugar, salt and pepper to taste to the chopped ingredients in the mixing bowl and stir for 20 sec./speed 3.

Add meat and mix

Add the fried and cooled 300g wild boar meat in pieces to the mixing bowl and fold in for 20 sec./Reverse/speed 2.

Season and let sit

Season the finished meat salad with salt and pepper and let it sit in the refrigerator for at least 30 minutes before serving.
