Description

This Couscous Salad is an absolute highlight for warm days! I especially like to make it when I need something quick and still want to put something healthy and delicious on the table. The couscous is refined with fresh herbs, crunchy vegetables and a tangy dressing. The mint and parsley give the salad a wonderful freshness. It is not only vegetarian and vegan, but can also be prepared and taken with you – ideal for a picnic or a relaxed lunch in the office. Try it out, you will be thrilled!

Ingredients (17 ingredients)

  • 200 g Couscous
  • 450 ml boiling hot Water
  • 0.5 tsp Salt
  • 4 piece Spring onions
  • 250 g Tomatoes
  • 1 piece red Bell pepper
  • 0.5 piece Salad cucumber
  • 10 g fresh Mint sprigs
  • 10 g Flat-leaf parsley
  • 6 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Tomato paste
  • 2 tsp Honey
  • 0.5 tsp Paprika powder, sweet
  • 0.5 tsp Cumin, ground
  • 1 pinch Salt
  • 1 pinch ground black Pepper

Preparation (6 steps)

Prepare couscous

Add 200 g couscous and 1/2 tsp salt to a bowl. Add 450 ml boiling hot water and let it swell for 5 minutes. Then loosen with a fork.

Prepare vegetables

Clean, wash and cut 4 spring onions into rings. Wash and dice 250 g tomatoes. Wash, core and dice 1 red bell pepper. Peel, core and dice 1/2 salad cucumber. Wash 10 g mint and 10 g parsley, shake dry and pluck the leaves.

Chop herbs

Put the plucked leaves of mint and parsley into the mixing bowl and chop for 3 sec./speed 5.

Prepare dressing

Add 6 tbsp olive oil, 2 tbsp lemon juice, 1 tbsp tomato paste, 2 tsp honey, 0.5 tsp paprika powder, 0.5 tsp cumin (optional), 1 pinch of salt and 1 pinch of pepper to the mixing bowl and mix for 10 sec./speed 3.

Mix salad

Put the couscous, the prepared vegetables and the chopped herbs in a large bowl. Pour the dressing from the mixing bowl over it and mix everything well.

Season and serve

Season the couscous salad with salt and pepper as needed. Serve immediately or store in the refrigerator until ready to eat.
