Description

This asparagus salad with vinaigrette, prepared in the Thermomix®, is a light and healthy dish with fresh asparagus, tomatoes, and herbs. Preparation with the Thermomix® takes about 35 minutes and yields 2 servings. Ideal as a vegetarian appetizer or light main course during asparagus season. The recipe is simple and seasonal, perfect for quick, healthy cooking.

Ingredients (13 ingredients)

  • 6 Stück white asparagus spears
  • rock salt or fat-free vegetable broth
  • 3 Stück tomato
  • parsley or fresh wild garlic
  • rock salt
  • black pepper
  • 4 EL white balsamic vinegar without sugar
  • 1 Stück small clove of garlic, pressed
  • 1 TL mustard without sugar (Dijon)
  • 6 EL asparagus water
  • rock salt
  • pepper
  • organic lemon

Preparation (7 steps)

Prepare asparagus

Peel 6-8 white asparagus spears.

Steam asparagus

Thermomix® Setting
12 min/Varoma/Speed 1 Varoma

Pour 500 ml water into the mixing bowl. Place asparagus in the Varoma container. Add rock salt or fat-free vegetable broth. Attach Varoma and steam for 12 min./Varoma/speed 1. After steaming: Open carefully - hot steam!

Alternatively: Cook asparagus in salted water

Alternatively: Cook asparagus in a pot with salted water for approx. 20 minutes until crisp.

Prepare tomatoes

Core 3-4 tomatoes and cut into cubes.

Chop garlic

Thermomix® Setting

Peel 1 small clove of garlic and place in the mixing bowl. Chop for 3 sec./speed 7.

Prepare vinaigrette

Thermomix® Setting
20 sec/Speed 3

Add 4 tbsp white balsamic vinegar without sugar, 1 tsp mustard without sugar (Dijon), 6 tbsp asparagus water, rock salt, pepper, and possibly some organic lemon to the mixing bowl. Mix for 20 sec./speed 3.

Arrange

Arrange asparagus on preheated plates. Add tomatoes and some parsley or fresh wild garlic over the asparagus and drizzle with the vinaigrette.
