Description

This chicken salad is an explosion of Mediterranean flavors, perfect for hot summer days! The combination of tender chicken, juicy cherry tomatoes, tasty olives and sweet corn creates a harmony of tastes that wins you over at the first taste. I often prepare it for a quick and light lunch, or for an outdoor picnic. Flaked Grana cheese and fresh basil add a touch of elegance and aroma. It is prepared in less than half an hour and is also ideal for those following a protein-rich diet. Try it, you won't regret it!

Ingredients (9 ingredients)

  • 4 piece chicken thighs
  • 300 g cherry tomatoes
  • 70 g olives
  • 120 g corn
  • extra virgin olive oil
  • fine salt
  • 40 g flaked Grana cheese
  • basil
  • lamb's lettuce

Preparation (8 steps)

Chicken preparation

Season 4 chicken thighs with fine salt _q.s._ and a drizzle of extra virgin olive oil _q.s._. Place the meat in the air fryer basket lined with perforated baking paper.

Chicken cooking

Cook the chicken in the air fryer for 25 minutes at 200°C, turning it halfway through cooking.

Cutting the chicken

Put the chicken on a plate, cut it into pieces and remove all the small bones (we can leave or remove the skin).

Salad preparation

Move the meat to a large bowl and add 300 g of cherry tomatoes cut in half.

Adding the ingredients

Also add 70 g of olives, 120 g of corn and then season with basil _q.s._, fine salt _q.s._ and extra virgin olive oil _q.s._.

Mixing the salad

Mix well so as to mix and flavor all the ingredients.

Plating

Pour a little lamb's lettuce _q.s._ onto a serving dish and place the chicken salad on top.

Final garnish

Complete with 40 g of Grana _in flakes_ and a little basil _q.s._.
