Description

This quinoa salad is an absolute highlight when it's warm outside! The combination of the slightly nutty quinoa, the crunchy bell pepper and the red onions is simply unbeatable. The rocket provides a pleasant spice and the dressing with lemon and honey rounds everything off perfectly. I like to make this salad when I have guests because it can be prepared very well and is always well received. It is vegetarian, healthy and filling - what more could you want? Be sure to try it!

Ingredients (9 ingredients)

  • 300 g Quinoa
  • 1 piece red bell pepper
  • 2 piece red onions
  • 100 g Rocket
  • 4 tbsp freshly squeezed lemon juice
  • 1 tsp Honey
  • Salt
  • Pepper
  • 4 tbsp Sunflower oil

Preparation (9 steps)

Wash Quinoa

Put 300 g of quinoa in a sieve and wash under hot water to remove the bitter substances. Then add to the mixing bowl and pour over 750 ml of boiling water.

Cook Quinoa

Thermomix® Setting
20 min/212°F/Speed 1 100

Close the mixing bowl and let the quinoa simmer for 20 min./100°C/speed 1.

Prepare bell pepper

While the quinoa is cooking, clean, wash and dice 1 red bell pepper.

Prepare onions

Peel 2 red onions and cut into fine columns.

Prepare Rocket

Clean, wash and shake dry 100 g of rocket.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Put 4 tbsp of freshly squeezed lemon juice, 1 tsp of honey, salt and pepper to taste in the mixing bowl and stir for 10 sec./speed 3.

Emulsify dressing

Thermomix® Setting
20 sec/Speed 3

With the blade running (speed 3), add 4 tbsp of sunflower oil drop by drop through the lid opening and emulsify for another 20 sec./speed 3.

Mix salad

Put the cooked quinoa in a large bowl. Pour the dressing over it and mix well. Fold in bell pepper, onions and rocket.

Arrange

Arrange the quinoa salad in a bowl and serve. A coriander yogurt dip goes well with it.
