Description

This dish is a real eye-catcher and tastes fantastic! The combination of tender duck breast, spicy red cabbage and the slightly spicy wasabi mashed potatoes is simply unbeatable. I especially like to make it for Christmas or New Year's Eve because it looks so festive. The preparation is a bit more complex, but it's definitely worth it! If you don't like it quite so spicy, you can use a little less wasabi. The dish can also be prepared well in advance, so you have less stress on the day itself.

Ingredients (15 ingredients)

  • 600 g Red cabbage
  • 2 piece Onions
  • 2 tbsp Sugar
  • to taste Salt
  • to taste Pepper
  • 4 tbsp Red wine vinegar
  • 4 tbsp Soy sauce
  • 1.5 tbsp Toasted sesame oil
  • 500 g Potatoes
  • 2 piece Duck breast fillets (approx. 350 g each)
  • 200 g Frozen peas
  • 1 tbsp Wasabi (tube)
  • 2 tbsp Butter
  • 2 slice Cheese (e.g. Gruyère)
  • Sesame for garnish

Prepare red cabbage

Thermomix® Setting

Put 600 g red cabbage and 2 onions in the mixing bowl and chop for 5 sec./speed 5. Use the spatula to push down.

Prepare red cabbage

Thermomix® Setting
20 min/212°F/Linkslauf Speed 1 100 Reverse

Add 2 tbsp sugar, 1 tsp salt, pepper, 4 tbsp red wine vinegar, 4 tbsp soy sauce and 1 ½ tbsp toasted sesame oil and simmer for 20 min./100°C/reverse rotation speed 1.

Cook potatoes

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Place 500 g potatoes, peeled and quartered, in the simmering basket. Fill 500 ml water into the mixing bowl, insert simmering basket and cook for 20 min./Varoma/speed 1.

Prepare pea puree

Thermomix® Setting
20 sec/Speed 8

Blanch 200 g frozen peas in a separate pot with boiling salted water for approx. 2 minutes. Drain, collecting approx. 3 tbsp cooking water. Add peas and cooking water to the mixing bowl and puree for 20 sec./speed 8. Add 1 tbsp wasabi and stir in for 5 sec./speed 4.

Refine mashed potatoes

Thermomix® Setting
20 sec/Speed 4

Remove cooked potatoes from the simmering basket and place in the mixing bowl. Add 2 tbsp butter and process into a fine puree for 20 sec./speed 4. Add pea puree and stir in for 10 sec./speed 3. Season with salt.

Keep puree warm

Keep the puree warm in the mixing bowl. Keep mixing bowl closed.
