Description

I have been making these stuffed wild boar cutlets for a while and they are always a hit! The tender wild boar meat, combined with the spicy Obazda filling and the crispy pretzel breading, is simply unbeatable. Perfect for a festive dinner or a special occasion. The preparation is a bit more complex, but it's worth it! Served with Spaetzle or fries, these cutlets are a real highlight. A hearty dish that is guaranteed to please everyone!

Ingredients (6 ingredients)

  • Wild boar loin
  • 8 Scheibe Black Forest ham
  • 1 Packung Obazda
  • 1 Packung Party pretzels
  • 2 Eggs
  • Flour

Preparation (6 steps)

Crush party pretzels

Thermomix® Setting
10 sec/Speed 8

Put the party pretzels into the mixing bowl and process into crumbs for 10 sec./speed 8. Then transfer and set aside.

Whisk eggs

Whisk the eggs in a bowl and season with salt and pepper. Set aside.

Prepare wild boar cutlets

Cut the wild boar loin with the butterfly cut into approx. 0.5 cm thick cutlets. Pound the cutlets wide and thin with a meat tenderizer.

Prepare ham rolls

Fill the ham slices with a good teaspoon of Obazda and roll up.

Fill and bread cutlets

Top the cutlets with ham rolls, fold over and fix with toothpicks. Turn the cutlets in flour, then in beaten egg, then in pretzel crumbs.

Fry Cordon Bleus

Fry the Cordon Bleus in plenty of oil in a pan on both sides until golden brown.
